Established in 1872, “Ryubai Daiginjou” is regularly praised as a top class sake in Oita Prefecture, and represents our flagship brand. We traditionally brew this mild-flavored sake by hand using yeast from Kumamoto. In 2019, Takashi Fujii became the chief sake maker. He continues to make sake with constant zeal and enthusiasm. We are proud of the advanced techniques we employ for our honkaku shochu, with “Fushigiya barley shochu” having received a rating of 3 stars from the ITI review board 10 years in a row.

This is our company’s flagship daiginjo brand. Praised as a top-class sake in Oita Prefecture, it regularly wins awards at the Kumamoto Regional Taxation Bureau Sake and Shochu Awards. This is a hand-made daiginjo which is brewed using only the highest grade Yamada Nishiki rice from Hyogo Prefecture milled to 35% of its weight, and spring water from deep within the mountains. It has a characteristic mild flavor which comes from the Kumamoto yeast.

This is a superior quality junmai ginjo sake made with Yamada Nishiki rice milled to 50% of its weight. All of the water used, from washing the rice to adjusting the final alcohol content, comes from springs deep in the mountains, and the entire process is done by hand. This barley shochu is made by traditional atmospheric distillation. It has a sweet, toasted flavor which complements both Japanese and Western style cuisine. A panel of commercial food judges from the International Taste Institute in Belgium awarded this shochu the highest rating of 3 stars for 10 years running from 2011 to 2020. This is the only shochu to achieve this in the honkaku shochu category. Oita’s barley shochu is recognized the world over as the best!
